Three words you are bound to hear in January: New. Years. Resolutions. By now it’s become fairly obvious whether you have a steady grasp on your new habits or you’ve slipped back into familiar territory of unhealthy eating, skipping workouts, and staying up too late. If you’re drooling like a wild animal every time you pass your favourite Minneapolis burger joint, there is no better way to trick yourself into staying the course than eating meals that feel like cheating. Healthy eating doesn’t have to be hard.

Healthy Mac & Cheese





It’s all the creamy goodness of quick and dirty boxed mac n’ cheese, without the side of guilt. Just sayin'.



Ingredients:


2 cups uncooked elbow macaroni – whole wheat, low glycemic, gluten free… any will work!

  • 1 tablespoon butter
  • 1 small yellow onion
  • 1 small butternut squash (4-5 cups cubed)
  • 5 cups chicken or vegetable broth
  • 3/4 cup milk
  • 1 teaspoon salt
  • 2/3 cup shredded cheese – I like Gruyère but any kind will work
  • parsley for topping
  • salt and pepper to taste

Spicy red curry cauliflower wings



Just because you’re trying to eat healthy so those custom tailored shirts keep fitting properly doesn’t mean you have to sit out on game night. Serve these and don’t say a word about it.



Ingredients:


BATTER

  • 3/4 cup (120 g) brown rice flour or chickpea flour*
  • Healthy pinch sea salt
  • 1/2 tsp curry powder
  • 2 tsp tandoori masala spice (see notes for DIY blend + where to buy)
  • 1/2 cup (120 ml) unsweetened plain almond or rice milk
  • 6-8 Tbsp (90-120 ml) water

CAULIFLOWER

  • 1 head cauliflower, large stalks removed, cut/torn into bite-size pieces

SAUCE

  • 1/4 cup (80 g) red curry paste (ensure vegan friendly - Thai True + Thai Kitchen are best)
  • 2 tsp melted coconut oil
  • 2-3 tsp maple syrup (to taste)
  • Water to thin (2-3 Tbsp or 30-45 ml)

Shepherd’s Pie – with cauliflower mash


A low-carb shepherd’s pie topped with mashed cauliflower and cheese that only takes 20 minutes of preparation. Take that, cravings!

Ingredients:

  • Shepherd's Pie

  • Extra virgin olive oil
  • 1 red onion diced
  • 500 g mince/ground lamb or beef
  • 2 cloves garlic crushed
  • 400 g tinned/canned chopped tomatoes
  • 60 ml beef stock
  • 3 carrots grated/shredded
  • Cauliflower Mash Topping

  • 1 small cauliflower cut into pieces
  • 55 g butter
  • 30 ml double/heavy cream
  • salt/pepper to taste
  • 50 g grated/shredded cheese

Ingredients:

  • ½ pound pasta
  • 6 slices bacon, diced
  • 1½ cups cauliflower alfredo sauce
  • ¼ cup sliced green onion
  • grated Parmesan cheese to taste

Vegan chocolate pudding



If your 2018 resolution is to slow down and enjoy life, then skipping dessert would be a sin. This recipe is tempting not only for its flavour, but how simple it is to make. Pour all the ingredients in a saucepan, heat and whisk, and leave in the fridge to set. Ta-da!


Ingredients:


  • 1 (13oz) can full fat coconut milk
  • 1¼ cups unsweetened almond milk
  • 3 Tbsp unsweetened cocoa or cacao powder
  • 4 Tbsp arrowroot starch/arrowroot flour
  • ⅓ cup coconut or maple sugar
  • ⅔ cup dairy free chocolate chips
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional)
  • pinch salt
