The Super Bowl is coming to Minneapolis. On the most important Sunday of the year, throw a party in true St Paul style and bring out all the favorite comfort foods — rich dips, stuffed potatoes, and a wall of nachos so high even Trump would endorse it.

Loaded Nachos

It’s game day so kick off the party with nachos in full gear.

  • 2 tsp. olive oil
  • 3/4 lb. fresh chorizo, casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 (15-ounce) can Black Beans, rinsed
  • 8 oz. Tortilla chips
  • 10 oz. sharp Cheddar or pepper Jack cheese, grated (about 2.5 cups)
  • 1/2 small head iceberg lettuce, shredded
  • 3/4 c. Fresh salsa
  • 1 avocado, chopped
  • fresh cilantro
  • pickled jalapenos
  • sour cream

Warm Skillet Bread And Artichoke Dip

Fresh, warm pull-apart buns ring the outside, while the centre is filled with warm artichoke and spinach dip. Say no more.


  • Bread Dough: (or use one loaf of frozen bread dough, thawed)
  • 2 3/4 - 3 cups all-purpose flour
  • 2 1/2 tsp active dry or instant yeast
  • 1 tsp fine salt
  • 1 cup milk, warmed but not hot
  • 2 Tbsp vegetable oil or melted butter
  • Artichoke Spinach Dip:
  • 4 cups loosely packed fresh baby spinach (or 1/2 of a 10 oz. package frozen spinach, thawed and drained)
  • 170 ml jar of marinated artichoke hearts, drained and coarsely chopped(can also use regular canned artichokes, about 2/3 cup chopped)
  • 4 oz cream cheese, at room temperature(1/2 a typical brick)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic minced
  • 1/2 tsp Sriracha sauce (or any "hot sauce" you like)
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup mozzarella, shredded plus more for topping
  • Salt and pepper

Crispy Loaded Potato Bites

One hundred percent of people agree that football shaped potatoes bites stuffed with cheese and bacon bits are the perfect Super Bowl snack. Probably.


  • 1 lb. small potatoes (about 2" across - red or Yukon work fine)
  • Olive oil
  • Kosher salt
  • Sliced cheese (your choice – I used Colby Jack), cut into small squares

For topping:

  • Light sour cream
  • Cooked bacon, chopped
  • Sliced green onions

Original spicy salsa

Roasting the main ingredients adds a subtle sweetness, while the lime juice cuts through the heat with a zing that will make you feel like dancing. You'll get the best flavor with a mortar, though you can mix everything in a blender.


  • 5 roma (plum) tomatoes, seeded and chopped
  • 3 large green peppers, chopped
  • 4 jalapeno peppers, seeded and chopped
  • 10 green onions
  • 2 cups white vinegar
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 3 garlic cloves, minced
  • 4 teaspoons ground cumin
  • 1 teaspoon salt


Combine all ingredients together in a blender, and then process until desired consistency is reached. If jalapeno peppers aren’t enough spice, kick it up a notch with serrano peppers.

For best results, let the salsa chill in the fridge for two hours before serving.
